Nose
Crisp and airy, opens with aspen notes that invoke the earthy, lemongrass, fig scents of the forest during the fall.
Palate
Anchored by an earthiness with some tangy raisins and spicy rye, it’s sweet on the palate with more verdant notes, in addition to spice, toffee, and vanilla.
Finish
Spicy and warm, with an almost menthol sweetness in the mouth and throat.

The best way to drink an aged rye is your way, of course. But Locke + Co owners Rick Talley and Owen Locke suggest you mix it in a cocktail called the Summer Blinker:
2 ounces Locke + Co. Aspen Aged Rye
½ ounce fresh grapefruit juice (not pink)
1 bar spoon raspberry syrup
Grapefruit slice for garnish
Combine all ingredients in a cocktail shaker with ice and shake vigorously. Strain into a chilled rocks glass and garnish with a grapefruit slice.
